It’s so fresh and soothing that it clears your sinuses and helps you heal. Let your food be your medicine right? The fresh ginger and lemon grass is all you need to feel better. Soups are great for fall and they store easily, so you can make double or triple the recipe to freeze it. Meal prep friendly recipes have a special place in my kitchen, especially ones that are perfect for fall. What I love best about this recipe is that there is no salt added. You don’t always need to cook with salt!

I enjoy food from many different cultures; Indian is definitely one of my favorites. It has the tendency to be spicy, so a word of caution… if you’re ever in an Indian restaurant and they ask you on a scale of 1-5 how spicy do you want it, say a 2. I know, that sounds like nothing if you like spicy food, but I found that their spice meter is vastly different from everyone else’s. The day I ordered a level 4 has scarred me forever. I was white knuckled, sweating and couldn’t feel my tongue. The waiter tried to talk me into ordering my chicken curry at a 2, but I didn’t listen.

It was always a good day when I would come home from school and smell the scent of stew that my mom had been simmering in the kitchen for hours. The scent, even now, is like a warm hug. It’s perfect for fall and winter and another great meal to prep for the week. Stew is a hearty meal, but it’s also a healthy, protein packed soup. I add some more veggies than your traditional stew and swap out white potatoes for sweet potatoes. Those little changes can make even your most sinful recipes better for your waistline.
Autumn Spiced Banana Bread
Banana bread is one of my favorite things to bake. It’s simple and you can do so many different flavor profile variations. Sometimes I add peanut butter; sometimes I add other fruit, like blueberries. It’s very versatile. Banana bread is also one of those treats that doesn’t feel like a cheat because it can be homemade and remain healthy. So I figured with fall just around the corner, I’d give you the recipe for my Autumn Banana Bread. And of course my recipe has a few ingredients swapped out… get used to it now.
