I’ve been exploring some dessert alternatives that give me the sweetness I crave without the sugar and calories. My little dark chocolate squares weren’t doing it for me lately, so I decided to try out some homemade vegan ice creams. I always have cans of full fat coconut milk in the house and a plethora of other tasty ingredients. I threw some things in a blender and hoped for the best. (That’s how I do most of my recipe exploration!) I was pleasantly surprised that my experiment worked!

Here’s the recipe….

Ingredients:

2 cans full fat, unsweetened coconut milk
1/3 cup cocoa
1/4 cup agave nectar
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp salt

Preparation:

In a blender, combine all ingredients and puree on high until smooth. Transfer into glass container with lid and freeze. Coconut based ice creams can sometimes freeze very hard. Simply allow it to defrost for about 10 minutes and heat the scoop if needed.

The great thing about this recipe is that you can customize it to anything your heart desires. Coconut milk will always be your base, along with your choice of sweetener, and the pinch of salt. You can swap out your main flavor for coffee, add frozen fruit, experiment with different extracts and pastes, or spices.

What is the best storage option for homemade ice cream?

I searched for reusable ice cream containers but all of the reviews said that they cracked easily. I stumbled across glass loaf pans with lids and figured I’d give them a try. They worked AMAZINGLY.

Yes, you can make vegan ice cream in a KitchenAid Stand Mixer! If you don’t want to buy the ice cream attachment, simply place the bowl and the whisk in the freezer for an hour. Add all the ingredients like you would in a blender and whisk on high. Whipping some air into the mixture may keep it from freezing too hard as well.

Is Vegan Ice Cream Better (Healthier) for You?

How healthy something is for you depends on the individual, but homemade anything is always going to be a healthier option because you regulate what ingredients your using and how much of each. In the long run, a homemade, sugar free vegan ice cream will be healthier and less calories than a regular ice cream.
