A Taste the Tropics: Blood Orange & Avocado Salad
I know it’s the end of summer, but we’re going to embrace it for as long as we can, okay?! Today, I have a quick, and sort of insane, salad combination that deserves a place on your table! It’s rich, citrusy, and vibrant! You won’t be disappointed.
1 Large Avocado
1 Blood Orange
1/4 red onion
2 TBSP Olive Oil
Juice of 1 lime
2 TBSP Cilantro
Salt & Pepper to Taste
Peel and slice avocado and blood orange into bite sized chunks. Place in a bowl and top with sliced red onion and cilantro. Drizzle with olive oil and the juice of one lime. Salt & pepper to taste.
