How many of you have tried internet hacks for things and have been disappointed with the outcome? Some of them are so wild and anything with food makes me weary. But, I kept seeing videos for vegan yogurt that uses tofu as it’s base and it was very intriguing, so I decided to try it myself to see if the hype was worth it! Vegan Tofu Yogurt Recipe

Ingredients

1/2 block medium soft tofu
1 TBSP cashew butter
3/4 cup frozen strawberries
1/2 frozen banana
Squeeze 1/4 wedge of lemon

Contents of 1 probiotic capsule (optional)

Toppings:
Granola
Blueberries

Preparation

In a high powered blender, combine ingredients and blend until smooth. Serve immediately.

Notes: The base of tofu and lemon are the only musts! Everything else is customizable. Add whatever frozen fruit you fancy – up to a cup. Choose your favorite nut butter and toppings.

If your blender is having trouble, add 1-2 TBSP nut milk or water to help it blend!
