Quick and Simple Vegan Recipe: Teriyaki Kale and Quinoa Bowl
I haven’t made a bowl style meal in a while. They’re so easy and so filling! You can really get creative and make them into any flavor profile you like. Since I had an open bottle of Trader Joe’s Soyaki, that’s what I went with. Veggies, beans, and quinoa make up a simple, yet filling and flavorful dish. Here’s how I made it happen…
2 cups Kale, shredded
1 can white beans, drained and rinced
1 bell pepper, sliced
1/2 yellow onion, sliced
1 clove of garlic, minced
2 TBSP EVOO
2 TBSP Trader Joe’s Soyaki
Pinch of Salt & Pepper
On medium heat, sauté garlic, onions, and peppers in 2 TBSP EVOO. Season with a pinch of salt and pepper. Once aromatic, add the kale; lightly stirring until it starts to wilt. Then, add the beans and 2 TBSP Soyaki. Stir until coated and cooked through. Cover to keep warm.
Cook 1/2 cup quinoa in 1 cup of water. Once it reaches a boil, let it boil for 2 minutes, then cover and let simmer for 5 minutes. Fluff with a fork.
Scoop half the veggie mixture into a bowl and top with 1/2 the cooked quinoa. Enjoy!
This makes 2 servings. Prep time: 10 minutes. Cook time: 10-15 minutes.
I love a few things about this dish. First off… it’s quick. Secondly, there aren’t that many steps or ingredients. Lastly, it’s packed with protein and fiber.
