Coconut Cream Superfood Chocolate Cups RecipeWho says you can’t have dessert and good nutrition at the same time?! Lies and propaganda. You can totally treat yourself and reach your health and fitness goals. It’s all about using quality ingredients and learning how to make things yourself. When you go homemade, you have control over everything that goes into your recipe! I’m not a fan of dieting, especially deprivation diets. So, pick up your forks and spoons and get ready for this decadent, HEALTHY dessert. This recipe includes ingredients from Aloha, which is one of my favorite companies. I’ve linked ingredients for easy purchasing, but don’t feel obligated to use them. I will suggest though, that whatever you do buy, is non-gmo/organic if you can afford it.

 

COCONUT CREAM SUPERFOOD CHOCOLATE CUPS

Makes Six Cups (Two of Each Flavor)

 

Ingredients:


Superfood Chocolate Cups

3 bars ALOHA Original Dark Chocolate 

 

Chocolate Berry Filling

1/4 cup coconut cream

1 packet ALOHA Daily Good Berry

1 packet ALOHA Daily Good Chocolate

1 teaspoon cocoa

1/4 cup fresh berries (I used strawberries)

 

Peanut Butter Whiskey Filling

1/4 cup coconut cream

1 shot whiskey

1 tablespoon peanut butter (any nut butter works)

1 tablespoon chopped nuts of choice (I used peanuts)

Optional: 1 tablespoon ALOHA Coconut or sweetener of choice

 

Coconut Cream Filling

1/4 cup coconut cream

2 tablespoons shredded coconut

1 tablespoon ALOHA Coconut

 

Preparation:

For Superfood Chocolate Cups:

You will need a shot glass mold for this recipe— Melt the chocolate in a saucepan on low heat—it does not need to be too liquidy. Once the chocolate is fluid enough to pour into the mold, do so. Freeze for at least 30 minutes. Remove the cups from you mold, while following the specific mold’s instructions. You can store them in the refrigerator for two months.

For Chocolate Berry Filling:

In a small bowl combine the coconut cream, half a packet of both Daily Goods, cocoa, and berries minus. Set some aside for garnishing. Using a fork, mash the berry-chocolate mixture, crushing the berries as much as possible. Combine the remaining Daily Good separately and set aside—you will use this to rim the chocolate cups.

For Peanut Butter Whiskey Filling:

In a small bowl combine the coconut cream, whiskey, and peanut butter. Mix well. If you desire added sweetness, mix in the ALOHA Coconut or sweetener of choice. Set the chopped nuts aside—you will use this to rim the chocolate cups.

For Coconut Cream Filling:

In a small bowl combine the coconut cream, one tablespoon shredded coconut, and ALOHA Coconut. Set the remaining shredded coconut aside—you will use this to rim the chocolate cups.

To Assemble: 

On a plate or cutting board, spread your garnishes out individually. Fill a small dish with a tablespoon of water. Dip the rims of the chocolate cups in the water and then dip in the respective garnishes. Fill the cups with the coconut cream fillings. Top with additional garnish. Enjoy immediately or store in the refrigerator for a week.
