Banana bread is one of my favorite things to bake. It’s simple and you can do so many different flavor profile variations. Sometimes I add peanut butter; sometimes I add other fruit, like blueberries. It’s very versatile. Banana bread is also one of those treats that doesn’t feel like a cheat because it can be homemade and remain healthy. So I figured with fall just around the corner, I’d give you the recipe for my Autumn Spiced Banana Bread. And of course my recipe is a vegan alternative!

Autumn Spiced Banana Bread

Ingredients

1 ½ cups of flour
3 ripe bananas, smashed
1/2 cup almond milk, unsweetened
3/4 cup sugar
1 tbsp white vinegar
1 Tsp baking soda
1 Tsp Vanilla
1 TBSP Cinnamon
½ TBSP Nutmeg
1 Tsp Ginger
PINCH of salt
Zest of one lemon

Instructions

Preheat oven to 350 degrees.

In a large mixing bowl or stand mixer, mix bananas, milk, sugar, vanilla, almond milk, and lemon zest. The, slowly combine in the dry ingredients: flour, baking soda, cinnamon, nutmeg, ginger, and salt. Pour mixture into a greased bread pan (coconut oil will do just fine)

Bake for 45 minutes to an 1 hour.
